I attempted to make french macaroons last Friday. I consulted my 3 books to see which one looked like the easier, most simple recipe - but they were basically the same except that The American Boulangerie had a shorter baking time (15 minutes).
The results were not what I expected and they didn't look nice but my cousins still liked how they tasted. Only about two came out perfect and the rest came out with extra bumps on the tops. Next time I'll try Martha's recipe since her recipes are tested probably 20 times and when Anne made them during Christmas, they came out good.
They're supposed to be bumpless? I like the bumps. They look really yummy!

They look good Joyce! I think the trick is (and I didn't learn this until afterwards) is to try to pipe them real high because they end up a little flatter after cooking. You make me want to bake some. Maybe this weekend.

Don't worry about the bumps.
Maybe it's like, the more times you make them, the less bumps you'll get? Like pratice makes perfect?
Allthough they look pretty perfect to me.

Wow... I am really impressed. This has been on my to do list for a long time. Funny... they scare me a bit... but I love them so and they are really hard to find in Australia. Maybe I will follow your example and give them a whirl
