Haupia is a coconut flavored dessert - and there are many variations of this recipe. Click here for one version...but here is an easy, very easy version of this recipe which I like but can't eat until my pregnancy is over as this calls for TWO cups of sugar.
List of ingredients: 2 cups sugar, 2 cups water, 2 cans coconut milk ; 6 packs of unflavored gelatin and 1 cup of water
Combine the 2 cups of sugar and 2 cups of water until the sugar is dissolved in a pot over low-medium heat - then add the coconut milk - but don't let it boil.
In a separate bowl, mix the gelatin and 1 cup of water together. It kind of looks like this:
Mix all together. I make sure the coconut milk mixture isn't too hot when I mix them all up. Then put in a pyrex (9x13).
After a few minutes you will see the coconut milk go to the top and the gelatin on the bottom so it makes a nice separation - like a layered type of jello. Put in the fridge to chill - and that's it! I call it jello haupia. I got this recipe from my aunt who's from hawaii and it's actually called "haole haupia". If you like coconut, you'll like this.
Mmmmm! Haupia! I've only made it the cornstarch way. I will definately have to try this recipe.

I made this for the first time a few days ago and both myself and my hubby loved it, it disappeared pretty fast. It reminds me a lot of the French pudding called Blanc Mange that my mom used to make when I was a child. I like the coconut milk version better.
